Ingredients
- 60g olive oil
- Large bunch of spring onions including the green parts
- 70g almonds
- 35g pine nuts
- 1/2 teaspoon cinnamon
- 100g fruit (grapes and apricots)
- 600ml stock
- 250g long grain rice
- 6 black peppercorns
- 3 cloves
- Good pinch of saffron strands
- Salt
- Parsley (optional)
Method
- Use half of the oil, add onions and sweat for 2 mins. until soft.
- Add the nuts and fry a bit hotter until browned.
- Take off the heat and add cinnamon and fruit.
- Heat stock, add remaining oil and add rice.
- Add cloves and pepper corns.
- Pour on hot stock, bring to the boil then simmer.
- When holes appear in surface, mix and eat.
