Method
- Heat some olive oil in a roasting dish, then slice half a red pepper, half a green pepper and half an onion.
- Roast in the oven for about 20 minutes on gas mark 5 / 180C.
- Slice the ready made polenta and grill it for about 5 minutes on each side.
- Make a sauce from 100g silken tofu and the juice of half a lemon by whizzing in a blender.
- To serve - arrange the polenta on a plate, top with veg and sauce and sprinkledon black olives, sliced sun-dried tomatoes and some pine nuts.
