Polenta Mixed Veggies

Method

  • Heat some olive oil in a roasting dish, then slice half a red pepper, half a green pepper and half an onion.
  • Roast in the oven for about 20 minutes on gas mark 5 / 180C.
  • Slice the ready made polenta and grill it for about 5 minutes on each side.
  • Make a sauce from 100g silken tofu and the juice of half a lemon by whizzing in a blender.
  • To serve - arrange the polenta on a plate, top with veg and sauce and sprinkledon black olives, sliced sun-dried tomatoes and some pine nuts.
